I want to send money to a family member but do not what them to know it came from me. Can anyone tell me what of my information is available to the person who receives the money I send when I send to an email address?

Your name and email address are included in the PayPal email message and the PayPal Transaction Details page.

so there is no way to hide my name? This family member would never accept the funds if she saw who it was coming from

That would be correct - if you have a Personal Account or Premier Account - both your name and email address are shared. If you had a Business Account, your business name and email address would be shared - bottom line, you could do what you have in mind if you had a business account however, that could be a moot point if the receiver knows that you have a business.
