If the payment is sent to you in a currency that you hold as a balance, it will be received and added to that balance. If the payment is sent in a currency that you do not hold, you will be prompted to convert the payment or add the balance the first time. The currency exchange rate fluctuates, but you can see the current rate by going to Wallet > Manage currencies > Currency exchange > Calculate.
