Is there a variable that will allow me to select the appropriate shipping method in a non-hosted button?

When creating a non-hosted button with the button tool, you can elect to override the default shipping settings of your shipping calculator and enter a specific amount for shipping:

Perhaps I should have been clearer because this does not answer the question I have. If I have more than one PayPal Shipping Method, how can I code the button to select the Shipping Method that is appropriate for the specific transaction. And I now have a second question: if there is a way to do this, do I need to set the methods to allow override. My account and all transactions are intra-USA.
