What information can the seller see?

I'm buying something online using PayPal but I was wondering what information can the seller see? I don't really want them to see information like my address since it's not needed for the product I'm buying.

It depends.
If you sent a payment via the Send and Request page, you can opt out of providing a shipping address.
If you paid at seller’s website, via a PayPal button, via invoicing, etc the seller can opt to require an address or not, how they categorized the payment for digital item/intangible service vs physical goods.
Otherwise, they can readily see your name and your email address in PayPal payment confirmation emails/transaction history but they can do business reports that can show other info but not the actual financial acct info, of course.
You can see what data fields in reports are available to business accts/personal accts alike by going to Settings > Statements and Taxes > See More Reports > Activity Download > Customize Report Fields
You always have the option of only buying from major, reputable sellers or be more discerning on who you buy from.
