Someone I am trying to purchase from said she’d invoice me, however she sent a money request. I have 2 questions: What’s the difference between the 2? Am I protected as a buyer If I pay the money request?

An invoice can be used to 'customise' a payment request but you are covered by buyer protection for both money request and invoices.

By customizable, do you mean being able to add a breakdown of each product, tax, shipping, etc?

They can described the item more accurately and it gives business sellers a chance to provide more info to the buyer eg refund policy etc etc .
