I'm trying to create a business account on PayPal, but for some reason it didn't have LLC as a business type, so I accidentally put sole proprietorship/individual. When it asks me for my documentation and I upload my EIN form, it's not accepting the form as an acceptable identity document.

It sounds like you have entered the incorrect business type. Don't worry, this can be updated.
