I understand your desire to have more control over the ability to process payments from your account. It sounds like there is a payment agreement with the game(s) that your grandchild plays. You can manage all automatic payments, subscriptions, and agreements by following the steps in this article about automatic payments. Once canceled, anyone would have to know your password to set one up again. If you change your password after cancelling those agreements, then no one would be able to recreate the connection to those payees.
