There are a couple ways to resolve this. If you use a PayPal "Buy Now" button and leave the amount blank, your customers will be able to enter any amount they want.
Pros: Except for initial setup, very little work on your part. You would just direct your customers to your site to pay and enter the amount they owe.
Cons: Dealing with customer errors when the amount is entered incorrectly. Not being able to customize the name of the service you are providing for each transaction
Another option is to send PayPal invoices. When you log into PayPal, there is a "Request Money" tab at the top. You can use this tab to send a quick "Money Request" using the customer's email address and the amount they owe. Or you can create a more customized and itemized invoice. With each option, the customer would receive an email from PayPal with the option to pay directly from the email.
Pros: Easy to customize. You can create invoice templates for future clients. No need for website coding or relying on the customer to enter the amount they owe.
Cons: More work on your part to fill out each invoice and manually send to the customer.
